大豆蛋白纤维横截面呈扁平状哑铃形、腰圆形、或不规则三角形。在电镜下可观察到它的纵向表面为梭子形条纹，中间有微孔，纵向表面呈现不明显的沟槽，且具有一定的卷曲。同时还可观察到潜在的原纤结构，不光滑，表面呈不明显的凹凸沟槽，具有明显的皮芯层结构。
